I would imagine the riding position sucks.
If you take a good look at the pictures in any of the motorcycle magazines, you can see just how small 600's (And liter bikes for that matter) have become.  The riders look like big monkeys riding little tricycles.  As much as the test reports claim certain bikes are "Comfortable", they are obviously sniffing glue.  I recall recent editorials extolling the virtues of bikes with a more upright seating position as certain magazine writers get older and fatter.  This speaks volumes as to the comfort levels of these little crotch rockets.
I've only sat on a few and can say that if you plan on wringing the 675's neck, it's ergos will be OK.  Other than that, it's gotta be a commitment.

It is roomier than you might think.  The legroom is good, and seat height favors a taller rider.  The bars are low and far away.  Not as far as a Duc, but far enough it is excellent for track riding.  There are some very tall people riding them- hunt down the Triumph semi if you can.  It either fits or it doesn't.

This from a guy who doesn't own one:

I've sat on the 675 several times (drool).  Its ass feels like it's way up in the air compared to Japanese 600s.  Oddly, that put more distance between seat and pegs, so my legs weren't as folded on the Daytona 675 as they were on the GSXR, R6, or ZX-6R.  But the downside: forward lean and the weight on my hands was noticeably greater than most Big Four 600s.

I'm 6'1", 35" sleeve and 34" inseam.

I'm 6' 1.5" and it fits me great.  I'll admit it's not the most comfortable ride but the leg room is excellent it's extremely narrow between the knees and with my long arms I'm able to move around quite nicely to find a decent ergonomic position.  I've done 500 mile days on it without anything to complain about, no cramping or anything.

Just get some stomp pads for the tank, it's so skinny it's difficult to hang on to with your knees and they make a huge difference  Thumbsup

Where is HOSS when you need him?

I'm here, I'm here!!

I'm 6'3" and too many pounds (so yes, Hoss is not just a clever nickname). By right, any 600cc class bike seems like a small bike for my size. But I wanted a sportbike, and know that I had no business on a liter bike.

I fit on the bike fine. Knees are not cramped. And because of my height, I'm not reaching way out across the tank for the clip ons. Do I look a little big for it? Yeah, I've been told I do...the bike is so much fun, I don't really care.

Best way to put it. I saw the demo bike the winter before they were released, and fell in love with it. The Triumph rep started it, and I soiled myself...then they let me sit on it.  The seat height was so high my legs were straight to the ground. SOLD!

Some people say it's a torture rack, some say they can stay all day on it. I have not problems, because of my size I think. Not having to stretch way out for the clipons is a big bonus for long rides. Speaking of long trips on one, I should have a trip report up from my Nova Scotia trip tonight.   Bigok

But since you said short rides, and track days...you'll have no problems IMO.

Any questions I can answer, let me know.
