Ladies and Gents,
I am seriously contemplating a new FJR, but the eat height (actually the flat profile) has me second guessing.
Is the Corbin or Sargent lower or do they have a rounder profile? It would be better for my 5'6", 127lbs frame to touch the ground. I not trying to flat foot it, but I don't want to be doing a ballerina imitation either!
Other salient facts: I'm an aggresive rider and feel comfrtable hanging off. Also would like to mount a passenger backrest from time to time.
Comments welcomed, but I am not interested in lowering the bike with suspension mods.

I can only help a little. The FJR has two seat height settings and the lower one is too far down for me (5' 10"), so that might help you out a bit. While I haven't run a Sargent on my FJR, I have used them on two Ducatis and one Triumph and while they were close to the same height as the stock seat, they were more narrow (although not overly so) and that made a huge difference as it did not splay my legs out quite a far.
Talk to Snowbird (Dan). He sent his stock seats to Sargent and they did an incredible job on them. I'm sure they could shave a bit of foam off the top and sides for you. And seeing that you weigh very little (I go 220 lbs.) I'm sure your comfort would not be compromised in the least.
As far as Corbin seats go, I've had several (most came on bikes I bought or that my g/f had) and could not sell them quickly enough. But this is a very subjective topic and YMMV, of course. I just never felt comfortable on them.

The Sargent mod sound like a good option. I hear what your saying about the Corbins...You either love them or hate them.

I've used both the Sargent and the Corbin on my '07 FJR and I prefer the Sargent, which is adjustable (the Corbin is not). For reference, I am 5' 7" with a 30" inseam and can get the balls of both feet on the ground with the Sargent in the lower position.

I have a Corbin on my 06 which should be exactly the same as 07/08. It has the exact opposite attributes from what you are looking for. The sides are stiffer and the same or even higher than stock sides and your butt is in a depression in the center. The stock seat actually allows you much better access to the ground if that is the proper way of describing it. The panels on the side slope down. That flatness you describe is noticeable and maybe even a benefit while moving because it is at the rear of the saddle. You skoot up when stopping to get into the more sloped portion of the stock saddle. Short guys are kinda screwed on most bikes and IMO if you are going to use the saddle as the adjustment point, you would be better off with a custom saddle maker.
