 Considering buying a pair of carbon fiber cans for my 02' Blackbird. Should I go with the Blue Flame cans, or Scorpion cans? I like these 2 brands because the packing material is stainless steel, and never needs repacked. Also, since I have the OEM panniers, will clearance be an issue? Opinions please!

No. not at all. I would take all of the torque gains I could possibly aquire tho'. I just want the weight savings of the CF over the stock cans, plus the lower exterior heat temperature. I don't want a loud exhaust either, but something with a throaty tone will be OK.
