But what parts of the hog go into the creation of scrapple? After the ham, bacon, chops and other cuts of meat are taken from the butchered pig—what remains are fixings for scrapple—including the meat scraped off the head. Scrapple may contain pork skin, pork heart, pork liver, pork tongue—even pork brains. Those faint of palate needn't venture any further.

OOO scrapple and ketchup on white bread brings back such fond memories. Still my fav way to enjoy this delicacy.

For the foodies...

Ingredients:
1 lb. pork liver (personally I'd omit the liver or use just a little bit)
1/2 lb. pork heart
1 1/2 lbs. boneless pork scraps
2 1/2 qts. water
1/4 tsp. ground sage
1/8 tsp. ground allspice (optional)
Salt & pepper to taste
3 c. buckwheat flour
3 c. cornmeal

Directions:
Place liver, heart & scraps in deep kettle. Cover with water. Boil until very tender. Drain meat, reserve. Chill broth and remove fat from surface.  (see it's low fat so eat up me harties, yo ho)
Trim meat and grind fine. Return broth and ground meat to kettle; add seasonings. Bring to boil. Combine buckwheat flour and cornmeal. Trickle mixture slowly into boiling broth, stirring constantly to avoid lumps. Lower heat and cook, stirring very frequently, for about 1 hour, or till mix is very thick and comes off the sides of the kettle. Rinse small bread pans or molds with cold water. Pour hot scrapple into them. Cool. When cold, cut into slices and fry in shortening until crisp and brown on both sides.

12 to 16 servings.

Yeah!  Long day in the saddle for us.  Quite an adventure on some great roads though.  Probably my fault it was so long for us though.  On slab 80 back, It became a parking lot ~10mi out of Stroudsburg so we bailed onto sr 715 to go south to us 22.  715 is a nice ride by-the-way.  took a wrong turn at rt209 but corrected before too much time was wasted.  Got in about 8:30.  Loved the ride.

More Endless Mountains

RIDE REPORT: SUNDAY, 10/12/08

Ten of us met at the Pilot and streaked across the Delaware River on Interstate 78 for 50 miles in search of sustenance. The Skyview Restaurant in Krumsville provided the necessary relief and fed the Biker Horde. On suggestion, TJ choked down his first scrap of scrapple which set the tone for his GI system the rest of the day. With two more riders added to the mix, we split up into two groups of six each and commenced our assault on the Endless Mountains.

Crossing the Appalachian Trail and driving past Hawk Mountain Sanctuary left us on Pa 895 with our first leg over Wildcat Mountain and through Cold Run Preserve. This is a neat little country road that will let you out on Pa 54 and into Mahonoy City. The two groups leapfrogged once after crossing Pa 209 so we could both savor the experience at a spirited pace.

Pa 339 provides another unique experience with it's twisty nature and long runs without Police presence.
There are a couple of turns that surprised some of us being that they are unmarked and of a downhill decreasing radius, but we made it through unscathed. After a six mile sprint on Interstate 80, we paused at the Citgo Station on Pa 487 to catch our breath.

An executive decision to explore the 35 mile additional loop up to Dushore was approved and we navigated the two crews up through Ricketts Glen State Park, Lopez, Mildred, and down to the Sunoco in Forksville for fuel. Entering World's End State Park, the traffic got a wee bit heavy all the way up to High Knob Vista where parking was at an absolute premium.

The view was great and the color spectacular as we threaded our way down the mountain ending up at the Central Park Hotel for the afternoon meal. A reservation was made for us in the dining room surrounded by mounted specimens. Everybody enjoyed their meal and the ambiance although no one was asked to dance.

Departing the Hotel, the crew headed down Pa 239 and crossed the Susquehanna River at Shickshinny. with TJ up on point. A short refueling stop just before Interstate 80 was required in anticipation of the "rolling road block" on Route 80. Back in the Garden State, it was a short hop home to my nest which clocked me in at 8:30 pm. No runs, no hits, and no errors for this ride.

Thanks to all who came out and a hearty welcome to BJ (Boxerdawg's son) and my son Chris.

Good roads, good food, and good friends is what S-T.N is all about.
