You didn't really define whether you have a preference for new (vs) used...adn what your budget is.  But if you're open to used models, you might want to consider the Buell Uly.  Plenty of torque...all day comfortable for two-up riding...capable off-road. although not a hard-core single-tracker (not that you're likely to be doing much of this two up...), and a well-proven engine / transmission / belt drive platform.
