If I rented a Tiger 1050, how easy would it be to wire up my Garmin 2720? How about a lead for heated gear?

It depends if it has the OEM aux accessory socket, which is a powerlet socket located near your left knee. That's where I had plugged in my heated vest but it needed a powerlet/widder adapter.
There is GPS hook-up wiring "under the hood" (the plug is in the nosecone) but it may or may not be hooked up, and just as likely it is not hooked to an outlet anyway.
If neither of the above circumstances are on the bike, then you will need to go back to the battery, which is under the seat. You could temporarily run the wires along the outside of the frame if you do not want to remove the tank, then poke it up through to your handelbars. If you prefer it under the tank, then it's a bit more involved to remove the side fairings, fuel tank hook-ups, and the fuel tank itself.
If it has a battery tender hook-up out the back with SAE connector, you could use that for the heated gear as long as it's fused.

When I borrowed a friend's Tiger for an extended ride, I just brought along the hardwire for my Zumo, connected the ring terminals to the battery, and routed the wire to the handlebars. Eazy peazy. Same deal if ya need to connect heated gear; as long as the bolt into the battery is long enough to hold multiple ring terminals you're golden.

^this -- if you follow SG's advice, you will immediately feel brighter, as well as discover that the Tiger is equipped with a accessory plug that does not match the socket you have on your GPS . . . .
go straight to the battery.

Bomber's post reminds me-- IF you have the right cord you can use the accessories socket for your heated gear. I now remember buying a cigarette-lighter (or was it BMW-style?)-to-coax cord for same. Which I have never used again.

Follow-up question:
Would it be best to use my handlebar RAM mount, or is there a slicker way to attach a RAM arm to the Tiger someplace?

the Triumph accessory socket is the Powerlet/BMW dealiebob . . . . . you'd need.
I've been using the handlebar mount on my Tiger with my Garmin 450 . . . .works fine, takes no more than a beer to install, and won't booger up someone else's scoot..

Yes as long as your leads are fused, of adequate length, and you have all the adapters needed.

Handlebar U-clamp is easiest IMO.

The Tiger's mirrors screw into the handle bars. Ram makes a base that will take advantage of this style. Unscrew the mirror, slip the base over the threads and screw the base back on. I have used this on my Uly. No easier way and it is only $12.95.
