Will the front fairings from a 2000 RS fit on an ST?  I'm not sure how/where everything mounts, or if there are other problems one might run into.  

Why?  From what I've read, the ST is more comfortable for longer rides - with a more upright riding position, and the ST is ready-made for the hard bags.  However, I do like the less plastic look of the RS.

Does anyone know if it's a simple unbolt/rebolt mod?  Thanks.

It's not.  Gauges are different, the entire bracket assembly is different, light housings are different, wiring harness is different, and so on.   Long story short, you'd need a donor bike, not just the plastics, and then be prepared for a bit of work getting all the electronics working and tucked in.  There are also holes in the ST frame for the fairing mounting that are rather unsightly with no fairing.

Other option is to find a late post-factory fire RS with the single sided swingarm, plop on some ST bars, and retrofit the bags.

Thanks, Croak.  Guess that answers my questions.  

Does anyone know how hard it would be to retrofit Triumph hard bags to the RS?  Are there other after-market suggestions for decent looking hard bags for the RS?

It's not an easy job to retrofit the bags (I've done it, on both my STs), and the hardest part is finding the parts, since they've been discontinued through Triumph since 2006.  I got my parts through Ebay.  Here's the page I used for instructions and the parts list:

SW Motech makes a universal (Givi, etc) Quick Lock mounting kit for the RS, but it may be discontinued as well, it's no longer listed on Twisted Throttle, which is the North American distributor for SW Motech. My bad, it's still available:

I think it would be easier for you to take the 1050 engine and put it in an RS than try to get the bodywork from an RS to fit an ST.  I'm saying that and I don't even know if the bolt holes would line up (doubtful).  It would still be easier.   Lol
