So, I am turning onto Raleigh-LaGrange this morning and I accelerate thru a curve, about to hit 3rd gear when I see the Police on my right in a parking lot with his radar gun pointing at me...I hesitate, we look at each other and he waves the gun for me to slow down. Since he is being courteous I respond in kind and back off the Blackbird

You're a good law abiding citizen Mr. County.
In MN running from the law is a felony now. Not worth the risk. When we were kids it was just considered good clean fun. There is noticeable lack of humor about the practice in these modern times.

I ran once successfully. Boy what a rush. Have never tried it again on purpose. There has been a few times friends have told me that I was being chased after meeting up with them again, but I never actually knew.

COW PATHS? You were lucky! We had to chase criminals on cliff ledges that were only 3/4" wide and over 1000 feet high, and after we fell off and died, had to get up and go to work in the mines for 20 hours.

Sometimes you feel lazy and don't want the hassle. Other times, if you're totally bored, it's entertaining to pull out and see if the rider will wad his bike up trying to flee.
Most riders don't get a lot of practice at high speed and some misjudge braking distance after topping 3X the speed limit.
Recently my beat-partner had a sport bike pass him on the freeway at well over 100mph. He flipped on his overhead lights and the bike accelerated even more, so he shut off the lights and resumed cruising. A minute later the call kicked out for a motorcycle/car collision at the off-ramp up ahead. The rider likely attempted to exit the freeway at 150mph and couldn't brake adequately in the space he gave himself. He torpedoed the back of a sedan and landed in the intersection, Dead Right There (DRT).
Motorcycle pursuits:
For the rider, it may be the game of his/her life. For the officer, it's not worth pausing youtube or spilling coffee on the uniform he's trying to get another shift out of before it needs to be cleaned. So go ahead, flee. You may survive, or not. Either way, in 5 minutes I'll be on the next level of Angry Birds.
The typical way a pursuit ends is when the chaser or runner crashes out. It's not worth it unless the driver is running pedestrians over or shooting people while driving. At the point I choose to pursue someone, I'm at the level where I'm ramming them with my patrol car, because the threat they present is so grave that I need to torpedo them with my vehicle now. If their actions fall below that level, then I'm not initiating a vehicle pursuit. I'll still flip on my lights to see if they yield. I may even go to the address where the motorcycle is registered, if I'm motivated enough.

FWIW, slowing down as a show of "courtesy" was undoubtedly appreciated by the officer, and it blended nicely with your desperate attempt to mitigate your speeding violation.
