Road suggestions needed

In October I'm doing my longer trip of the year, and could use some road suggestions and places to stay. Here's what I have roughed out:

Day 1: Ride from Nashville area across the Dragon's Tail. Stay either at Deal's Gap lodge or in Robbinsville.

Day 2: Ride across the Cherohalla Skyway, then to Helen, GA. From there, ride over and stay at Blood Mountain motorcycle resort.

Day 3: Ride some roads in GA (this is where I could use some road suggestions), then head up to Tellico Plains and stay at one of the MC campgrounds there.

I'm also toying with the idea of riding down to Tellico Plains on day 1, then cutting across the Skyway and riding down to Helen on the NC side. How are the roads along that path?

Day 3: Ride some roads in GA (this is where I could use some road suggestions)

Hwy 197 by Lake Burton.
Hwy 75/17 north from Helen.
Hwys 19, 129 (Blood Mtn), 180, 60 loop.
Hwy 60 from Suches to Morganton.
Many tasty backroads just off of all of the above...

Ah, 197 looks great. Might need to revise this a bit and put a stop in to Helen on day 3.
