Coolest bike ever. I owed a 2004 for about 1.5 years.
Downsides:
Heavy for a sportbike
You'll be lucky to get 120 miles to a tank (I know someone said 160... don't even THINK about it)
You'll sink more money into that bike than any other bike... because it
begs
to be customized
it's a torture rack... way worse than any RR, R1, GSXR, ZX (and I owned a 929, 954, R1, GSXRk5, ZX10R)
Upsides:
It's special. Period.
Coolest sound EVAR!1!11!!!1

laptimer, aftermarket case covers, steering damper, after market rear-sets. after market exhaust, (suspension maybe?)

Yes, you convinced me not to buy one.
Actually, the sweet deal I found on an RC51 sold to somebody else and a blue/yellow CBR was another bike on the want list and I found a good deal for it.

Aww...you chickened out. The RC51 is a true race bike. Above 80mph it turns into a manageable and effective missile. Below that it's like a dorky 13 year old at a middle school dance, with the voice of Satan. All around solid bike, which is also a downfall for street use because the chassis is beefy and stiff. Squeeze the tank with your knees and twist the throttle and you can ride all day. It's a bike that begs to be ridden correctly and aggressively. Squids need not apply. If you don't do what you're supposed to it will let you know.
I have a 1000RR race bike and I couldn't imagine riding it on the street and maintain a valid driver's license or my life. It's a bit softer and more forgiving than the RC ('03 for 2 years, mostly track bike) but there is no way you could come close to using half the power on tap. If you have a responsible and mature right wrist you may have found a very good super
sport
bike
tourer. Very neutral and easy to ride below 1/4 throttle. The 600rr feels like a tiny, underpowered kids bike in comparison. Easy to ride though.
Do you do any trackdays RRdvark?
The RC was homely, the 1000 is fast.

Did some WERA racing back in the day, but no track days. Thought about it and have an older GSXR600 in the garage I bought just for that purpose, but doubt it will happen (that GSX-R is for sale now too). Getting an XR100 ready for some flat track racing instead. Cheaper and less chance of hurting myself.
The 1000RR will stay on the street just like my 600 did. At 41, I think I can control my wrist enough to keep my license but that thing wheelies awfully easy...

I will own one some day...seems like a really good deal never flew infront of me when i had the spare cash. The sound is amazing. I'm no stunter but will pull the occasional small wheelie....these bike rock at wheelies. They have TQ out the wazzoo.
Personally, i will always have an I4 screamer that can wind out to the moon. But the RC would be a great second bike for me. Well, in my case, 4th bike.

bit of a thread bump here. I picked up a pristine '02 RC51 a few weeks ago:
I've not had it on track yet but can already tell that's where it belongs. I've done a few quicker paced rides with friends and it does feel at home above 80mph. As far as some basic touring there is some light at the end of the tunnel. I'm 34, 6ft and 200lbs and I'm getting to the point where the novelty of a supersport on the street wears off pretty quick. However, I've put on some Buell lowering pegs, Apex adjustable clipons w/ Manic Salamander bar ends, Tech Spec tank grips, and a Sargent seat (none are pictured). It's actually not that bad compared to my '07 R1 that had similar mods. In fact I just completed a 7 hour leaf tour of NC and VA the other day. I was pretty beat at the end of the day but not too terrible. I am surprised at how quickly I was getting the monkey butt even w/ the Sargent. I'm doing a trade for a Corbin so we'll see how much of a difference there is. The stock seat was like sitting on a metal pipe - no thanks for the street! I think combined with a taller screen this bike will do just fine until track season rolls around again.
The gas mileage does suck though. I've got Sato slipons (instant chubby) combined w/ a PCIII and I"m getting 34ish mpg if I ride like a grandpa or <29mpg if I gas it all. That equates to 120-100 miles per tank with premium. Not that great and worse than the R1.
All that said the bike is overall awesome and I'm glad I got it. It has always been one of my "bucket list" bikes so I think I'll enjoy it for a while.

I miss my RC terribly on the track. If I could get rid of this stupid little kid's bike 600 I have an opportunity to get a hooked up RC for the track.

Mostly Nesba, but I've done days with BostonMoto (when they did VIR) and Team Promotion. I might do a few days with STT if I make it to Barber and US Desmo.

I love mine. I think everyone has covered the "cons". But I don't see fuel range as an issue, most of the time you are wanting to get off at around 150miles anyways, to piss, or drink, or snap a photo if you are on trips with friends. I did 2500 miles in 7 days and I'm 5'7" on a good day with a 27" inseam. The bike is "ok" comfort wise for me, but if my tank bag isn't all the way forward i can have trouble turning. Also, your legs are tucked up pretty tight, so sometimes when riding long distances my hips can cramp. Since the riding stance is pretty aggressive and im short, my wrists sometimes have problems (granted i have carpel tunnel) but some people have issues since the downward angel of the clipons are more aggressive then other bikes. With all that said, the RC51 with a pipe and power commander is the most fun bike i've ever ridden. It sounds like an angry pissed off V8, and the pull of the TWIN is STOP linear all the way to redline. The BIGGEST draw back is the insurance is STUPID expensive here in michigan. I have NO POINTS and no accidents on my record and the cheapest rate i can get is $1400/year and thats with a paid in full discount. This is the main reason im considering selling mine. But if you have the coin its probably the most fun bike out there, and yes you can tour on it. Pics below....

Now that is what it's all about, run what you brung. So refreshing to see someone ride a bike they love and not whine about lack of tank range, comfort etc. Get on the road and deal with it. You are a true motorcyclist.
