My wife just had hers taken out laparoscopicly in the last month and a half.  She was into the hospital by 7am, into surgery by 8, and was walking out the door of the hospital around 11am.  Her worst day was about the 2nd or 3rd day after surgery, at a point where her pain meds weren't enough to control the pain.  Only lasted about a day and then it was controllable again.
She had surgery on a Fri morning and was back to work the following Tuesday.

Before she had it out, she was having terrible indigestion, abdominal pain, diarrhea, and other similar symptoms and they ruled it to likely be her gallbladder.  An ultrasound and HIDA scan came back normal but a biopsy afterwards did show signs of inflammation.

Within a couple hours following her surgery she could already feel relief where she had felt the pain before, and it ultimately cured all her symptoms.  We don't eat a terribly fatty diet, but after about a week of recovery she was able to eat anything and she has yet to discover any foods that irritate her system.  Some people are more sensitive to certain (fatty) foods after having it out, while other people notice no difference.  My wife and grandma both fall under the latter category and haven't noticed any ill effects.

The surgeon also did such a beautiful job (4 small abdominal incisions), I won't be surprised if she never ends up developing a single permanent scar from it.

Get it taken out, start feeling some relief, and don't look back.  Good luck!

I had mine removed about 10 years ago. It was full of stones and had caused pancreatitus.
I believe all unnecessary parts should be removed to save weight.
No problems since. I try not to eat a lot of fatty foods anyway.

You can live perfectly fine without a gall bladder. I do.

The same can't be said about the liver.  

You will have to eat less bacon.

Eat smaller portions more often.
