Pulled Pork Pancakes

If you are rolling through vancouver, and feel the need for brekkie, hit the Red Wagon at East Hastings and Sunrise. They serve up an awesome dish, Pulled Pork Pancakes. Golden buttermilk pancakes with pulled pork layered in between and covered in butter and a syrup made from reduced Jack Daniel's and maple syrup. Awesome! Sorry, didn't get a pic as I was too busy eating.

Believe me when I say they are way better than you can imagine, or than they sound. Quite possibly Red Wagon has invented the perfect food.

Based on your description I can't argue with that.

Honestly, no need for the bacon, as their is plenty of pulled pork layered between the pancakes.

Had something very similar to that at one of the park service food joints on the BRP... (Otter Creek maybe?) Pulled pork, cole slaw and maybe some sort of Q sauce between pancakes. Not good for zipping up the stich but good for shoveling into your piehole.

I am not a fan of Jack Daniels, but the syrup was good. I imagine it was mainly good old Canadian Maple Syrup with a splash of Jack, then reduced. Very tasty and was a nice counter to the heat of the pulled pork.
