Bike has been sitting for some yrs,, we recently got it running and it runs great and idles fine with only with the choke on,,, we can turn it down once it is warmed up but it never gets to a point where we can totally turn the choke all the way off,,, because it always stalls out.
(tank was rinsed and new fuel added and new plugs as well)

Sounds like a complete carb disassembly and cleaning is needed.
Parked for 4 years with gas in the carbs is not a good thing.
Idle jets are probably plugged. They are very tiny.
You can dump some fuel treatment in there and hope, but you're probably going to be peering at a rack of carbs upside down on the workbench soon.

Tear 'em down and replace needles and jets and clean everything else. Check the floats still floating, adjust the levels, reassemble, install, prime, start the engine and synch check. Probably a day's worth of work if you take your time. Might have to go to eBay or special order for parts.

not sure if you're local to me, but I have the same bike, and a sync gauge and way more experience inside those carbs than I want to admit to. In my experience, if you pull the pilot jets, you probably won't be able to see through them. Clean them out and it'll start running normally.
