My non stick pan gets cleaned with a paper-towel.
Hot water and a plastic bristle brush does my cast pans just fine. Caked & baked-on stuff rolls right off the oil-seasoned surface. It literally takes seconds to clean the pan.
Re-oil with olive or spray canola. Good to go.

I did "Venison Bourguignon" the other night--neighbour gave me the venison on the condition I invited him for dinner when I cooked it
I used a simple Beef Bourguignon recipe, the result was great (I've done this before, the dish suits venison very well). I prefer it served over gnocchi, but that night I just boiled up some tiny potatoes and some greens to go with it.
Tonight, a simple meal: cod fillets braised in white wine sauce, roasted squash, and probably some steamed chard.
But the main reason I'm posting here now is to respond to this:
Quote from: CLAY on March 03, 2012, 11:10:05 AM
Meh cast iron. Hot is hot.
Perhaps "hot is hot," but--there's more to cooking than "hot." There's something about the heat distribution and retention of plain cast iron, and also the way stuff just doesn't stick to it (it's gotta be hot and have a small amount of oil in it, but even omelettes just lift right out). When I'm done, I just rinse the pans and I'm done (no soap, ever!).
I
love
my cast iron stuff--I prefer plain cast, BTW, not enamelled or otherwise coated (although I did recently purchase an enamelled iron dutch over, on sale at 70% off, specifically for cooking beans on the pellet grill...). I've got lots of stainless, including some very expensive tri-ply, and some commercial hard anodized aluminum as well, but...nothing beats cast iron, IMO.
One thing I don't have is cheap, "non-stick" cookware. Waste of money IMO, no matter how cheap.

Salad. I've been eating salads for dinner pretty much every night for a few weeks. I feel better without a heavy meal at night.

Ooh, I'm coming to your place for dinner.
Not sure what's on the agenda for this evening, but last night we had turkey burgers topped with pan fried veggies and crispy buffalo chicken. It was wonderful.

My wife decided to stay in town last night at a friend's place...it just so happened I'd seen some chicken gizzards in the market and bought them on a whim, for just such an occasion...so, dirty rice for me last night!
(I love gizzards, my wife, not so much

Last night it was bread and water.
By bread I meant it was a French Baguette smeared with aged Limbuger cheese; by water I meant a pint Guinness Draught.

Lamb with onions and mushrooms, cooked with spices and yogurt--an Indian dish that's one of our favourites. I also made "Sooke Aloo," which is a fancy term for spicy hash browned potatoes, and steamed some chard. An excellent meal!
