st2sam needs to drop his opinion but I think the valkyrie is an excellent choice but I am not sure about available luggage.

A friend of mine rode one for about 10 years. Did a lot of LD riding on it. He only sold it because he had his heart set on a Road King. He loved the Valkyrie, though. His only complaint was that his had carburetors, and it would lose power at altitude.
Not sure if he did two up touring, but that thing is so huge I am sure whoever is on the pillion will be comfortable.

However, two up?
I never ride two up, I removed rear seat and installed a rack for luggage.
Handles like a heavy sport bike, more torque than horsepower, 250mi. tank range on regular grade gas, buy a new leftover for 1/2 of new cost, three year unlimited mileage warranty, 28,000 trouble free miles on mine, 200,000mi. Goldwing motor, ALL LED lights, single sided swing arm, shaft drive, I can go on for hours.
I can't believe Honda didn't sell more of these. (I blame Marketing.)
We are talking about the second generation I hope?
The first generation is a completely different motorcycle.

First gen. Tiny fuel tank and low fuel mileage could be an issue. Some guys claim they are plenty sporty, some say not so much. I need two up. My Guzzi V11 Lemans and Buell X1 are the solo bikes.

The F6B is more 'toury'. Mini fairing and saddle bags. Can add a rack for more storage.

Love that bike. It had only a few things I woulda changed. A big round headlight or more like the new Guzzi Eldo. Some kinda hard bags, kinda like the Corbin Beetle Bags. I still think about getting one!

I think I'd rather have a used Goldwing and do it properly.
Then, you'd have proper luggage and a proper passenger seat. I'm sure there are pipes that growl a bit more available for them. Maybe the 3rd model year of the then-new 1800s?
That said, I DO like the look of the first-gen ones, and they sound FANTASTIC with more open pipes. I've seen 6 into 6, must've been straight pipes. OMG, sounds better than a CBX.

Definitely do NOT want a Goldwing. I have an 1100...that's boring enough! Lol. No seriously, I don't want that much tupperware. I want a bike with a clear windshield and that's it.

Not me, my K1200 is way too much plastic. The Valk needs to loose the pillion & grab rails. Maybe a Day Long saddle if needed.
