For me, it is that the ergos are just more comfortable. I could do longer mile days on the ADV bikes than any of my ST bikes.
I do have shoulder and back issues that seem to favor wide bars and being able to stand up to stretch regularly (without getting off the bike or bending over in a jockey position). YMMV

I could understand that but personally I’d prefer a 1200 Bandit type bike over the adventure touring things

I went from a Blackbird to an Africa Twin. I missed the power of a big 4 cylinder. I got an FJR. The ergo s were all wrong. I could not live with that bike. I just got a new BMW 1300 GS. And I couldn’t be happier

I wonder if it has to do with failing infrastructure. As the roads get worse, the more you need an adventure bike to survive the hazards.

That's a heartening outlook. LOL
I don't know where you are, but we are under road construction nearly everywhere I look... specifically addressing infrastructure.
On the heels for the biggest property tax cut I've seen in my lifetime. My property taxed halved this year from last.

There is that. The longer suspension does help.
Debra and I were doing a back road dinner ride. She was on her MT09 and I was riding the T7. She told me we needed to get on a different road as that one was beating her up, lots of frost heaves. I hadn't noticed it was that bad.

If I was motorcycle touring again I would chose a GS over an RT, FJR, etc any time of the day. When going cross country you can never be sure of road conditions, or construction. Riding a fully packed FRJ on a gravel road was like rock climbing in high heel shoes. Not at all suited for the condition. Whereas on the GS, given the same roads, I would answer my email if required. The bike and geometry just didn't care. Plus, if you wanted to take a fire road, no problem.

I had a 2013 Guzzi Stelvio NTX. I thought it looked attractive and purposeful, at the same time.
But I think classic standards look good also.

The 1300 GS is nice! I decided to stay in the more sport touring friendly S1000 XR. What a beast of a bike but comfy as can be.

I went to a Motorcycle Sport Touring Association (MSTA) ride to eat today. Fifteen bikes showed up - thirteen ADV bikes, one naked bike, and one FJR.
